Did someone say Fall inspired waffles?!



By now many of you have probably hit up your local apple orchard and grabbed several heaping pounds of apples. Maybe even some apple cider, apple crisp, apple muffins, apple bread.. basically all the apples!


But what the heck do you do with those apples once they are in your home? Well one quick way to unload quite a few is to whip up a batch of homemade apple sauce!


Here is a super simple recipe that will compliment our delicious fall inspired waffles!


5 apples, peeled, cored, and cut in chunks Pinch of salt 1/2 teaspoon cinnamon (optional) 2 tablespoons sugar (optional)

Put the apple chunks in a saucepan on medium heat with just enough water to keep them from sticking when you begin cooking them. Add the salt and cinnamon (if using) and cook, stirring as needed, until the apples break down to a sauce consistency. This can be as short as 5 minutes, or as long as 20 minutes, depending on the apples you are using.

Taste for sweetness and add the sugar, if desired. Continue cooking and stirring until the sugar is dissolved in the mixture. Taste again, and add more sugar or cinnamon, if desired!


Next, I would love for you to give yourself permission to stay in your pajamas, find a classic family movie, make a batch of  delicious apple cinnamon waffles and spend time together with your family or maybe your having a girls weekend. Whatever your weekend looks like, do it as relaxed as possible!


It’s exactly what we need to do. Today, the news has been filled with chaos, deaths and horrible reports . Take time over the weekend to spend time with your family, making memories and just “being”.


Here is an easy vegan (or non vegan) apple cinnamon waffle recipe with ingredients that I’m sure you have in your cupboard.


Please note, make sure your waffle iron is well greased  and very hot.


Ingredients:

  • 1 1/4 cup of flour

  • 2 teaspoons baking powder

  • 1/2 teaspoon cinnamon

  • 2 teaspoons sugar

  • 1 cup milk of choice

  • 1/2 cup applesauce

  • 1 teaspoon vanilla

  • 1 tablespoon vegetable oil

Instructions:

  1. In a large mixing bowl, combine flour, baking powder, cinnamon, and sugar. Set aside.

  2. In a separate bowl, combine soymilk ( or milk of choice) , applesauce, vanilla and oil.

  3. Add soymilk mixture to the dry ingredients, stirring just until combined; do not overmix.

  4. Carefully drop about 1/4 cup batter onto preheated waffle iron for each waffle, and cook until done. Golden brown.

  5. Serve with warm maple syrup, apples, even whipped cream!
