Fall time means apple season! One of my favorite activities in the fall is apple picking. An annual tradition for us to take the boys and head to the local apple orchard and spend an afternoon picking as many apples as possible. We always end up picking an excess amount of apples and then left to figure out what to do with all the apples.
Apple cinnamon overnight oats are delicious ( I’ll add the recipe soon!) , apple muffins or bead from Wilson’s Farm family cookbook, apple sauce, applea with almond butter or my favorite apples with cheddar!
I am always looking for a quick and simple recipe to use the apples. Busy mamas need to throw together healthy, yummy and fun quick recipes! Don’t you agree?
Here is a new recipe that the boys have been craving and loving– apple quesadillas! They absolutely love cream cheese!

Apple cinnamon Quesadilla
Ingredients
1 (6-inch) whole wheat tortilla
2 Tbsp. cream cheese softened
½ tsp. ground cinnamon
½ tsp. raw honey
½ medium apple thinly sliced
Instructions
Spread half of tortilla with cream cheese.
Top cream cheese with cinnamon, honey, and apple. Fold tortilla in half; cook in medium nonstick skillet over medium-high heat, for 4 to 5 minutes, turning once, until apple has softened and tortilla is golden brown.
